Start your day off right with these energizing breakfast ideas — making it easy to rise and shine!
I’m not a morning person… at all. I’d rather sleep in until my internal alarm clock goes off. Do a good stretch in bed, open my eyes slowly, and start my day calmly and steadily. Buuut that’s not how it goes as a mom of five. Like, ever.
Instead, my alarms scream at me as I beg them for five more minutes. Something I’ve realized makes my mornings more stressful than they should be is that I’ve gotta get up and make everyone breakfast.
You just know when everyone needs a delicious, nutrient-dense, protein-hearty breakfast.
Not to mention it becomes challenging to come up with new breakfast ideas after a while. I feel like we’re on repeat around here sometimes when it comes to meals. Well, since coming up with this list… that’s not the case anymore.
I can pick from any of these delicious recipes from this list of breakfast ideas, and my family is grateful that it’s not a granola bar or a cereal kind of morning. Because skipping breakfast isn’t an option for us.
Do You Skip Breakfast?
I get it — breakfast isn’t everyone’s jam. Some people would rather grab a cup of coffee and get moving in their day. If you’re one of those people, I’m not here to judge you at all.
I simply want to encourage you! After all, you’re here for a reason — looking to diversify your breakfast.
Studies show that skipping breakfast is tied to harmful habits that can lead to obesity, high blood pressure, and even clogged arteries.
Research also shows that people who eat breakfast take in more vitamins and nutrients during the entire day. Eating breakfast sets a precedent for your day by kickstarting your metabolism. Other benefits include:
- Boosting your mood
- Improving memory
- Decreasing inflammation
So if you’re not 100% opposed to eating breakfast, try not to skip it if you can help it.
Around here, skipping breakfast isn’t an option. Why?
- Reason 1: I’m starving when I wake up. Seriously. I wake up thinking about everything from cheesy scrambled eggs to fluffy pancakes with berries and elderberry syrup drizzled over the top. I’m a foodie — can ya tell?
- Reason 2: It’s one thing to decide to skip breakfast for yourself if you’re an adult, but it’s not just me anymore. Now I have other mouths to feed. My kids’ health is in my hands. If I know it’ll help them throughout their day and with their overall health, we’re doing it.
Breakfast is essential! It sets the tone for your entire day.
It gives your body the nutritional value it needs to get up and move without depleting yourself before you’ve even gotten out the door.
Again, there’s no judgment if you or your kids don’t love breakfast. These recipes are so versatile that you could have them as lunch, a snack, or even as your dinner (brinner, as my kiddos call it!).
Here are my quick & easy recipes for my favorite breakfast ideas. They make it easy to rise and shine!

Easy Sheet Pan Pancakes
Ok, this recipe is absolutely genius! I'm definitely a pancake lover, but standing over my cast iron and flipping one at a time is sooo time-consuming.
Needless to say, before I discovered this recipe, we didn’t indulge in pancakes very often. That’s not the case anymore!
Instead of flipping jacks all morning, now you can just make one supersized pancake.
Just cut it into squares and enjoy! This recipe is also gluten-free and only made with ten simple ingredients. Remember to top them with whipped cream and a drizzle of elderberry syrup.

These little balls of energy are awesome! They’re nutritious and make the perfect grab-and-go snack.

Energy balls are a fiber-rich combination of protein, good-for-you carbs, and healthy fats. You can customize them with the ingredients you’re in the mood for. Fruity, crunchy, chocolatey… the possibilities are endless.
They’re a favorite in my house and seem to disappear faster than I can make them. It’s impossible to just have one, seriously… I’ve tried.

Pumpkin Muffins With Elderberry Glaze
These melt-in-your-mouth muffins are made with coconut oil, pumpkin, elderberries and way less sugar.
If this is your first time baking with coconut oil, you won’t believe what it does for the texture of a muffin. Don’t like the flavor of coconut? Don’t worry about it! You won’t taste it at all.
Did you know that one cup of pumpkin contains more vitamin A than a cup of kale? Or that one cup of pumpkin has more potassium than a banana and more fiber than ½ cup of quinoa? Crazy right?
This recipe is super easy and super nutritious. Plus, you can make them ahead of time and even freeze them to make mornings a breeze.

Elderberry Smoothie Bowl
Get a healthy dose of superfoods with this tasty smoothie bowl. If these captivating colors don’t convince you of how delicious this smoothie bowl is, the flavors certainly will.
A smoothie bowl is a way to enjoy a smoothie as a meal. You simply reduce the amount of liquid, making a thicker smoothie. Then pour it into a bowl, and next comes my favorite part… toppings!
Sprinkle on all sorts of toppings, such as fresh fruit, cacao nibs, shredded coconut and even a drizzle of peanut butter. Then, grab a spoon and chomp away. Absolutely delightful!
