Summer Fruit Pizza: An Easy & Fresh Dessert (Here’s How to Make It)

Get ready for my favorite summertime recipe that’s incredibly easy to make, impressive and crazy delicious.

Ok, envision this. A soft sugar cookie crust topped with elderberry-sweetened Greek yogurt and garnished with fresh summer fruits. 

How does that sound? If you’re anything like me, it sounds delicious and you’re ready to make this dessert today. Right?

This recipe is a crowd-pleaser for sure! It’s stunning to look at – it even impresses those who aren’t fans of dessert. It’s also super simple to whip up and can feed a big group easily.

Get ready to have no leftovers when you show up to a BBQ, shower or potluck with this gorgeous treat.

What Exactly Is Fruit Pizza?

Fruit pizza is a delicious treat that combines the goodness of a pizza with the sweetness of fruits. Instead of the usual pizza toppings like cheese and sauce, it has a delicious crust made of cookie dough.

Then, it's topped with a sweet spread – either cream cheese, Greek yogurt or frosting. We’re opting for the healthier version and using elderberry syrup-sweetened Greek yogurt.

Finally, it's decorated with lots of colorful and fresh fruits like strawberries, blueberries, kiwis, pineapples and more. 

It's a fun and tasty dessert that’s impressive and satisfies that sweet tooth! 

High in Antioxidants & Low in Sugar

It’s a win-win when you can enjoy dessert and reap nutritional benefits at the same time.

The berries and elderberry syrup add a nice boost of antioxidants. Take a look at the benefits of high-antioxidant foods:

Ingredients to Make This Delicious Summer Dessert

Ready to sink your teeth into this scrumptious fruit pizza? Grab these ingredients and let’s get moving!

CRUST INGREDIENTS:

  • 1 1/2 cups all-purpose flour (or sub-gluten-free 1:1 flour)
  • 1 1/2 teaspoons organic cornstarch
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup softened unsalted butter
  • 3/4 cup maple sugar 
  • 1 large room-temperature egg
  • 1 teaspoon vanilla extract

TOPPING INGREDIENTS:                                                        

  • 1 ½ cup plain full-fat Greek yogurt (for dairy-free: sub canned coconut cream or non-dairy Greek yogurt)
  • 1 ½  tablespoon organic elderberry syrup
  • Mixed berries, kiwi… whatever fruit your heart desires

How to Make Fruit Pizza

Now that you have all your ingredients ready to go, it’s time to bake and assemble this yummy dessert. Here’s what you need to do.

FOR THE CRUST:

  1. Start by making the crust: whisk the flour, cornstarch, baking powder and salt together in a medium bowl.
  1. In a large bowl, using a handheld or stand mixer, beat the butter and sugar together on medium-high speed until combined and creamy. Then beat in the egg and vanilla. Don’t forget to scrape down the sides of the bowl as needed. 
  1. Add the dry ingredients to the wet ingredients and beat on low speed until combined. Once completely combined, cover the dough and chill in the fridge for 20 minutes (or up to one day). Note: Let dough sit out at room temperature for 20-30 minutes if chilling longer than a couple hours because the dough will stiffen up and make it hard to flatten.
  1. Preheat your oven to 350°F and grease a 12-inch pizza pan (we like to use coconut oil) or use a pizza stone to skip greasing. Remove chilled cookie dough from the fridge and press onto the pan in a 10-inch circle, about 1/3-inch thick. If the dough is sticking as you press it, just slightly wet your hands so it’s a bit more manageable.

  1. Bake for 17-19 minutes or until the edges are very lightly browned. Try to avoid over-baking. You want a crisp and chewy cookie crust, not crunchy and crumbly. Then, cool your crust completely without removing it from your pan before decorating.

FOR THE TOPPING:

  1. Combine and mix Greek yogurt (or a non-dairy option) and organic elderberry syrup. Spread this yummy yogurt mixture over the cooled crust, then top with berries. Add optional toppings if desired.
  1. Cut into pizza slices or be a rebel and go for squares – then enjoy!

Your tastebuds will be over the moon happy that you made this delectable fruit pizza.

NOTE: You can pop the fruit pizza in the fridge if needed to keep it cold before serving.

Customize to the Season

One of my favorite things about this recipe is how easy it is to customize based on the season. Take a look at these ideas that are sure to sweeten up any time of the year…

Summer: Use fresh summer fruits.

Fall: Use fall fruits like apples or dried cranberries and sprinkle with cinnamon.

Winter: A little more indulgent – I like to use bananas and drizzle with peanut butter and chocolate.

Spring: Try garnishing the fruit pizza with lavender and add lemon zest to your crust!

The variations are limitless. Have fun and customize it to your and your family’s preferred taste.

Can I Use Store-Bought Cookie Dough?

Absolutely! Just make sure to read those labels and try to pick a cookie dough with cleaner ingredients if you’re looking to keep this dessert healthy and nutritious. 

Can I Use Canned Fruit?

I recommend not using canned fruit. The watery liquid makes this stunning pizza turn into a drippy mess. Even if you dried the fruit on a paper towel before using it, it still seems to get runny on the frosting because of the water absorbed.

If you can, always choose fresh when it comes to a fruit pizza!

Can You Make This Dessert the Day Before?

You can make the dough the day before! Just be sure to let the dough sit out for 2-3 hours before flattening and assembling your pizza – it can get quite hard in the fridge.

If you make the entire fruit pizza (toppings and all) the day before and refrigerate, it will get mushy. Trust me, I’ve tried it. It was a big flop.
