Love ice cream, but your body hates dairy? Psssh. No worries at all. You can use any type of milk you prefer. When I make this recipe, I typically use almond milk and it turns out ahhhhmazing. Like “I’ve attempted to skip off with the entire blender’s worth of ice cream to myself” kind of amazing, haha.
Don’t judge, please. I just really love ice cream.

Most recipes for ice cream require some time in the freezer – which means one thing… you have to play that silly waiting game. I’ve never been a fan of those types of games. It’s just a tease, in my opinion.

Don’t Throw Those Overripe Bananas Away
Ever had a bowl of bananas that have gone too brown and you keep telling yourself you’ll make banana bread, but it doesn’t happen? This is the story of my life, haha!
Ya never get around to making that bread, right? It requires pulling out all the ingredients and mixing, and baking, and yada yada.
But breaking them into chunks and tossing them into a Ziploc and then the freezer is SO MUCH EASIER. Then, when you’re having an ice cream hankering, you’re good to go! Just make sure you have my elderberry syrup on hand too.
So don’t throw away your overripe bananas. Freeze them and make homemade ice cream instead.
Remember: the darker they are (but not gone bad) the tastier and creamier your ice cream will be!

How to Make Homemade Elderberry Ice Cream
This recipe is super easy, that’s why it’s my go-to recipe all summer long for a cool treat!
Here’s how to make it:
1. Peel your bananas, break them into chunks and toss them into a plastic container or Ziploc bag to freeze. I usually do this the night before or I just make a habit of always having some frozen and ready to go. The bananas are good in the freezer for months, so no worries there.
2. To make the ice cream, toss the frozen banana chunks in the blender with ¼ cup of elderberry syrup. Blend well, it will be very very thick.
3. Then drizzle milk slowly allowing the mixture to blend properly. Stop when it resembles the consistency of ice cream.
4. Pour into a bowl, add any desired toppings, and indulge.
Pretty simple, huh? It’s oh-so-delicious.
Topping Ideas for Your Ice Cream
There are two types of people in this world: those who love toppings on their ice cream and those who aren’t a fan.
I’m actually both, it just depends on the mood I’m in.
So… if you’re in the mood for some yummy toppings on your delicious elderberry ice cream, here are a few I recommend:
- Fresh berries (raspberries, blueberries, strawberries, you name it!)
- Drizzle peanut butter or almond butter
- A dollop of elderberry blueberry jam
- Chocolate chips
